- 2 lb (s) mixed baby lettuces (Savage River Farms, Backbone Food Farm)
- 3 count apples (Ruggles Orchard, Walnut Ridge Farm, Goodness Grows)
- 1 bunch grapes ( Peacock Vineyard, Goodness Grows)
- 1/2 cup sliced raw almonds
- 1/2 cup olive oil
- 4 Tbs rice wine vinegar
- 3 Tbs lemon juice
- 3 Tbs whole grain mustard
- 1/2 tsp chopped or dried tarragon
- 1/2 tsp chopped or dried oregano
- Toss almonds with a pinch of salt and toast either in a pan or in a hot oven (watch closely - thin nutmeat slices burn quickly). While toasting, slice grapes in half; core apples and slice thinly; core and leaf out lettuces. Toss fruit and nuts with greens. Whisk vinaigrette ingredients except oil until blended. Stream in oil, whisking constantly. Toss salad ingredients with vinaigrette until evenly mixed; finish with a grind of pepper and sprinkling of salt.
